Almond Tart with Strawberries

Ingredients

  • 350g plain flour
  • 225g unsalted butter
  • 100g icing sugar
  • 3 egg yolks
  • 1kg strawberries
Filling
  • 350g unsalted butter
  • 350g castor sugar
  • 350g whole almonds 
  • 4 eggs

Blend pastry ingredients in a food processor. Remove, wrap and cling film, and chill for an hour. Coarsely grate pastry into 30cm tart tin and press down. bake for 20 mins at 180c.

Cream butter and sugar together and chop almonds and add. Beat in eggs. Pour into pastry case and bake for 40 mins at 150c.

Decorate with berries and icing sugar.
